The lid serves to contain the volatile oils and heat while the tea is steeping and as a strainer when the tea is transferred into the cups.
Gaiwan tea services can be used for any tea, but particularly preferred for teas with delicate flavors, like white, green, or oolong. Puer lovers also prefer the gaiwan for multiple steepings.
